Ingredients:


½ cup small pearl tapioca (not minute tapioca)
2 ½ cups milk
½ vanilla bean, halved lengthwise with the seeds scraped out
pinch of salt
one 14 oz can unsweetened coconut milk
2 large egg yolks
¼ cup sugar
2 cups peeled and diced mango (from 2 medium mangoes)
1 Tbsp grated lime zest
2 Tbsp fresh lime juice
