Beef Salad (Salata de Boeuf)

2 lbs beef or turkey (white or dark)
1 cup frozen peas
1 jar pickles, once they are chopped you'll need about 1½ cups of diced pickles, the more the better
2 lbs potatoes, peeled
1 lb carrots, peeled
½ cup to 1 cup mayonnaise
¼ cup mustard
salt and pepper to taste
