Peruvian-Inspired Pasta Bolognese


1 (1-inch piece) fresh ginger (peeled and chopped)
7 clove garlic (peeled and chopped)
3 tablespoon red wine vinegar
1 tablespoon ají amarillo paste (see note)
¼ teaspoon freshly cracked black pepper
3 tablespoon soy sauce
1 pound dried fettuccine (or other ribbon pasta) I used spinach flavored
2 tablespoon canola oil
1 pound ground beef sirloin (90% lean)
1 medium red onion (peeled and finely diced)
2 plum tomatoes (halved, seeded, and finely diced)
1 cup chicken stock
½ cup freshly grated Parmesan cheese
2 tablespoon minced cilantro
kosher salt (as needed)
