Chocolate Peanut Butter Pancakes (Buckeye Pancakes)

Ingredients:

¾ cup creamy peanut butter
¼ cup (1/2 stick) butter, softened
½ teaspoon vanilla
¼ teaspoon salt
1½ cups powdered sugar

Pancakes:
2¼ cups all-purpose flour
⅔ cup + 2 tablespoons cocoa powder
¼ cup brown sugar
½ cup granulated sugar
2 tablespoons baking powder
1½ teaspoons salt
¼ cup plus 2 tablespoons canola oil
2 eggs
1 teaspoon vanilla
1 cup strongly brewed coffee, cooled so that it is not hot
1 cup whole milk
Optional toppings: creamy peanut butter, whipped cream and buckeye candies
