Ham, Egg and Potato Breakfast Casserole


2 tsps olive oil
1 medium onion, chopped
1 red bell pepper, chopped
8 ounces mushrooms, chopped
2 cloves garlic, minced
6 eggs
1 cup cottage cheese, pureed in food processor
1 cup cheddar cheese, shredded
2 cups cooked ham, diced
2 potatoes, shredded
salt and pepper
