3/4 cup pureed carrots (use baby food or cook your own and blend until smooth)
1/4 cup pecans
3/4 cup brown sugar (either light or dark)
2 1/2 cups heavy cream
2 teaspoons unflavored gelatin
1/2 cup golden raisins
2 oz. softened cream cheese
1 teaspoon coconut extract
1 teaspoon cinnamon
1 teaspoon vanilla
1/8 teaspoon salt
