Chocolate Manicotti


4 Manicotti pasta shells

For The Chocolate Cashew Filling:

2 cups soaked cashews
3/4 cup almond milk
6 tablespoons cocoa
3 tablespoons brown sugar (add 2 or 3 more for a sweeter filling)
1 teaspoon instant coffee
1/3 cup coconut oil melted

For The Chocolate Sauce:

3 tablespoons coconut oil
2/3 cup dark chocolate chopped (I used 70%)
1 teaspoon vanilla
