Pumpkin Sugar Cookies with Salted Caramel Buttercream Frosting


Ingredients for the cookies:

1 cup butter, softened
½ cup canned pumpkin puree (NOT pumpkin pie filling)
1 cup sugar
⅔ cup powdered sugar
1 teaspoon vanilla
2 eggs
4 cups flour
¼ teaspoon baking soda
¼ teaspoon cream of tartar
½ teaspoon salt
2 teaspoons pumpkin pie spice
5-6 drops India Tree orange food coloring
India Tree orange sugar sprinkles

Ingredients for the frosting:

1/2 cup granulated sugar
4 tablespoons water
2 teaspoons light corn syrup
1/2 cup cream
1 teaspoon vanilla
1 teaspoon lemon juice or vinegar
1 teaspoon salt
2lb powdered sugar
2 sticks butter, softened
