Chicken and Dumplings




For Dumplings:
1 cup all-purpose flour
1 egg, beaten
2 tsp baking powder
½ tsp salt
2 tbsp chives, chopped
½ cup buttermilk

Chicken soup:
1 tbsp olive oil
1 onion, chopped
1 large carrot, chopped
1 large celery stalk, chopped
½ tsp dry thyme
4 cups chicken broth
⅓ cup all-purpose flour
salt and pepper to taste
½ cup frozen peas
2 cups roasted chicken, shredded (any part of the chicken will do, both white and dark meat would be great for flavor)
