Garlic Knots with Beer Cheddar Sauce

Ingredients:

For the dough:

1 cup warm water
2¼ teaspoons (1 package) active dry yeast
1 teaspoon honey
2 tablespoons olive oil
3 cups all-purpose flour
1 teaspoon salt

For the garlic butter:

¼ cup butter
2 tablespoons olive oil
3 tablespoons garlic, chopped (plus 3 whole cloves)
1 teaspoon coarse sea salt
2 tablespoons fresh parsley, chopped
¼ cup freshly grated parmesan cheese

For the beer cheddar sauce:

2 tablespoons butter
2 tablespoons all-purpose flour
½ cup whole milk
¾ cup beer (pale ale)
2 teaspoons Worcestershire sauce
2 teaspoons spicy brown mustard
½ teaspoon salt
½ teaspoon black pepper
2 cups sharp cheddar cheese, grated
