Homemade Kimchi


One fresh cabbage middle size around 1000g
Salt as needed

Spicy sauce:

250 g chili pepper powder
50ml fish sauce
Half of a middle size apple (around 200g)
Half of a middle size pear (around 200g)
One small bunch of chive
1 teaspoon salt
1 tablespoon dried small shrimp (salted)
1 tablespoon sugar
6~10 cloves garlic
2 sections of ginger
1 tablespoon glutinous rice powder
10 tablespoons water
