Sweet Corn Soup with Paprika Shrimp

Ingredients:

FOR THE SOUP:
2 Tbsp olive oil
1 large onion, chopped
2 cloves of garlic, minced
6 cups corn kernels (from 6 ears of corn)
2 sprigs of fresh thyme or 1 tsp dried thyme
salt and pepper to taste
5 cups water or vegetable stock
FOR THE SHRIMP:
1 Tbsp olive oil
½ lb large shrimp, peeled and deveined
½ tsp smoked paprika
salt and pepper to taste
