1tbsp light brown sugar
½tsp fresh ginger, finely grated
1cm piece red chilli, sliced
½ head cauliflower
~ 15 stalks tenderstem
~ 6 medium mushrooms
100g (~2/3 cup) plain flour
1tbsp (heaped) cornflour
Salt
Black pepper
Oil for frying
250ml (~1 cup) ice cold sparkling water
