For the frosting:
12 ounces cream cheese, softened
1 cup (2 sticks) plus 2 tablespoons butter, softened
5¼ cups powdered sugar (confectioner's sugar)
1½ tablespoons vanilla extract
1 cup chopped pecans, optional, for topping
