Roasted Strawberry & White Chocolate Cheesecake

For the roasted strawberry topping (optional - make this first if including):

225 grams (8 ounces) strawberries, washed and quartered
2 tablespoons honey
1 tablespoon olive oil
2 teaspoons balsamic vinegar
a pinch of salt

For the cheesecake:

125 grams (4.4 ounces) ginger snap biscuits/cookies OR digestive biscuits OR graham crackers
1/3 of a cup (75 grams) butter
1 and 1/4 cups (300 gram or 10.5 ounce package) light cream cheese such as Philadelphia
1 cup (about 200 grams) Greek yoghurt (or light mascapone cheese if you prefer)
200 grams (7 ounces) good quality white chocolate
1 teaspoon vanilla extract
about a cup or 125 grams of chopped strawberries plus 3 to 4 extra whole ones for decorating
a mint leaf, for decoration (optional)
