Gluten Free Raw Fig Tarts



For Crust:
1 cup shredded coconut (unsweetened)
1 cup cashew meal (I got mine at Trader Joe's)
2 tablespoons sugar
2 tablespoons coconut flour
3-4 tablespoons butter, melted (add 3 and mix. Add one more if needed)

For Tart:
3 cups ricotta cheese
1 cup plain yogurt
½ cup honey
1 teaspoon vanilla
Toppings like fresh fruit, nuts (I used pumpkin seeds), and honey to drizzle on top.
