Lamington Fudge Bites

Ingredients:

Fudge base:

100g dates (approx 6 – 7 fresh), pitted
1/4 c boiling water
1 can chickpeas, drained and rinsed (or substitute with 1 1/2 c cashews, soaked 2 hours)
1 tsp vanilla paste
1/3 c coconut oil, melted
scant 1/2 tsp sea salt
2 tsp lemon juice

Jam filling:

generous 1/2 c frozen raspberries

Chocolate & coconut coating:

1/2 c raw cacao or cocoa powder
1/4 c coconut oil, melted

3/4 – 1 c dessicated or shredded coconut (no sugar)
