Coconut Milk Rice and Beans


2 tbsp extra virgin olive oil
2 garlic cloves, finely chopped
1 small onion, finely chopped
4 thyme sprigs
1 tsp cumin
½ tsp all spice
1 bell pepper, finely chopped
1 heaped cup tomatoes, chopped
3 cups canned kidney beans
1½ cup long grain rice
3 cups light coconut milk, warmed up
2 tbsp cilantro, finely chopped
salt and pepper to taste
