Honey Mustard Glazed Cranberry Pork Loin Roast

Pork Loin Roast:
1 - 6 pound pork loin roast, see note
2 Tablespoons avocado or olive oil
2 large onions, 2½ pounds
1 cup cranberries, 3.5 ounces

Honey Mustard Thyme Glaze:
2 Tablespoons honey
¼ cup Dijon mustard
1 Teaspoon fresh thyme, stems removed and minced
½ Teaspoon sea salt, or to taste
¼ Teaspoon freshly ground black pepper

White Wine Sauce:
1 Tablespoon tapioca starch
1 cup dry white wine, or good quality chicken stock
