Spinach and Sausage Lasagna

Ingredients:


2 tbsp olive oil
1 small yellow onion, chopped
3 cloves garlic, pressed
3/4 lb. spicy lean Italian sausage, casing removed
3/4 lb. sweet lean Italian sausage, casing removed
1 – 28 oz. can crushed tomatoes in tomato puree
1 – 6 oz. can tomato paste
1/4 cup fresh parsley, chopped (separate out 2 tbsp)
1/2 cup fresh basil, chopped
1/2 lb. lasagna noodles
1 – 10 oz. package frozen chopped spinach, thawed and strained really well
16 oz. ricotta cheese
1 cup grated Parmesan
1 egg, lightly beaten
2 cups (8 oz.) shredded mozzarella
Salt and pepper
Approximately 1/4 cup powdered Parmesan for topping
