1/2 cup shredded carrot
1/4 cup finely chopped spinach
2 tablespoons whole-wheat flour
1 tablespoon olive oil
1/4 teaspoon salt
1/2 teaspoon pepper
1/2 cup frozen peas, thawed
flatbread, shredded lettuce, cheddar or havarti cheese, tzatziki (optional – for serving)
